Thrown together tuna casserole from what we had around.

Recipe Ingredients for Tuna and Rice Casserole

2 cups cooked long grain brown rice
1 1/2 cups leeks, finely chopped
1/2 cup carrots, diced
1/2 cup celery, diced
5 oz. yogurt, goats milk
1 cup frozen peas, thawed
2 tbsp. butter
1 tsp. dried tarragon
1/2 tsp. paprika
1 tsp. salt
1/2 tsp. black pepper
12 oz. solid white albacore tuna in water, drained

Recipe Directions for Tuna and Rice Casserole

  1. Sweat leeks, carrots and celery in saute pan with the butter. Add tarragon, salt and pepper once softened. Let cool slightly.

  2. In a large bowl, add drained tuna, yogurt, peas, rice and cooled vegetables.

  3. Scoop into a greased casserole dish, sprinkle with paprika and bake at 350 degrees for 20-30 minutes or until heated through.
