quick and easy tuna patties. use salmon if you like.

Recipe Ingredients for tuna patties

425 g tuna, canned, drained
1/4 cup shallots, sliced thinly
1 egg, beaten
1/2 cup cous cous, cooked
1 pepper
1 salt

Recipe Directions for tuna patties

  1. Mix all ingredients together in a bowl making sure to break up all of the tuna chunks.

  2. Season with herbs like dill or fresh coriander if you want to.

  3. Shape into balls, about 10, put onto a plate, cover and put in the fridge for at least half an hour.

  4. Heat a non stick frypan to very hot. Cook about 4 at a time placing the balls on the pan (no oil) for 2 mins, then roll to the other side for another minute.

  5. At this point you can flatten them with the back of the flipper. If you try to flatten them straight away they will stick to the pan and I'm trying to create recipes with no oil.

  6. No draining is required as there is no oil so put straight onto plates and serve with a summery salad and a sweet chili/ginger sauce.
