Recipe Ingredients for Tuna Noodle and Veggie Casserole

4 c. egg noodles,uncooked
1 c. fresh Mushrooms, Sliced
1/2 c. Onion, diced
10 3/4 oz Cream of mushroom soup
1/2 c. fat free milk
2 cans tuna in water, drained
2 c frozen mixed veggies
1/4 c mozzarella cheese, Shredded
1/2 c. crackers, crushed
1/4 c. Parmesan cheese, grated

Recipe Directions for Tuna Noodle and Veggie Casserole

  1. Cook noodles to package directions for Aldente.

  2. saute mushrooms and onions, add soup and milk and heat through. stir in the tuna and veggies and Mozzarella cheese.

  3. then stir the tuna mixture with the noodles.

  4. make crumb topping by mixing crackers, grated parm and melted smart balance. top the casserole and broil till melted and bubbly. Enjoy!
