Tuna Noodle Casserole with Veggies - great leftovers for lunch

Recipe Ingredients for Tuna Noodle Casserole with Veggies

48 oz tuna, chunk light in water
2 lb carrots, baby
2 cups celery, chopped
2 cups onion, chopped
12 cups egg noodles, 8 cups uncooked
4 cups lite sour cream
1 cup skim milk
2 tbsp dill
1 salt and pepper to taste

Recipe Directions for Tuna Noodle Casserole with Veggies

  1. boil egg noodles, carrots, celery and onion for 10 minutes - drain leaving about a cup of water in the pot

  2. reduce heat add tuna, sour cream, milk, dill, salt & pepper stir, cover and simmer for 1 hour
