Tuna Noodle Casserole Recipe

Sometimes I omit onions because I'm slightly allergic to them and this recipe comes out just fine without them.

Recipe Ingredients for Tuna Noodle Casserole

1 tbsp butter, unsalted
1/2 white onion
2 stalks of celery
1.34 cups Cream of Mushroom Soup
2 tbsp spelt flour
1/2 cup 2% milk
6 oz albacore tuna
5 cups rice noodles
2 tbsp Parmesan cheese
8 cups frozen vegetables

Recipe Directions for Tuna Noodle Casserole

  1. In a pot, sauté chopped onion and celery in butter until they are soft, but do not brown the onion!

  2. Add flour, stir well with wooden spoon

  3. Add cream of mushroom soup, stir well

  4. Slowly add the milk and keep stirring until it begins to boil and thicken up

  5. Drain tuna, break it up into small chunks and add to the sauce, allow the sauce to simmer for a couple minutes, then turn off

  6. While cooking the sauce, start the noodles and cook according to package directions

  7. Drain the noodles and put them into the sauce, mix well with a wooden spoon and then pour it into a casserole dish

  8. Bake in oven for 20 minutes at 350 degrees

  9. Wait about 5 minutes while the casserole is cooking and then start steaming the vegetables, allow them to steam for 10 minutes
