Tastier, much less bland than the usual tuna casserole. One serving = 1 1/3 cups

Recipe Ingredients for Tuna Noodle Casserole - Cooking Light Jan/Feb 2010

10 oz. egg noodles
2 tbsp olive oil
1/2 cup onion, chopped
1/2 cup carrots, chopped
2 tbsp. all-purpose flour
2 3/4 cups skim milk
4 oz. reduced fat cream cheese, softened
2 tbsp Dijon mustard
1/2 tsp salt
1/2 tsp black pepper
1 cup frozen peas, thawed
4 oz. grated parmesan, divided
10 oz. albacore tuna in water, drained and flaked
1/4 cup breadcrumbs
1 Cooking spray

Recipe Directions for Tuna Noodle Casserole - Cooking Light Jan/Feb 2010

  1. Preheat broiler.

  2. Cook noodles according to package directions, omitting salt and fat. Drain.

  3. Heat a large skillet over medium heat. Add oil to pan; swirl to coat. Add onion and carrot and cook 6 minutes or until carrot is almost tender, stirring occasionally. Sprinkle with flour; cook 1 minute, stirring constantly. Gradually stir in milk; cook 5 minutes, stirring constantly with a whisk until slightly thick. Stir in cream cheese, mustard, salt, and pepper. Cook 2 minutes, stirring constantly.

  4. Remove pan from heat. Stir in noodles, peas, half the parmesan, and tuna. Spoon mixture into a shallow broiler-safe baking dish (2 qts.) coated with cooking spray. Top with remaining parmesan and breadcrumbs. Broil 3 minutes or until golden and bubbly. Let stand 5 minutes before serving.
