Recipe Ingredients for Tuna Lentil Casserole

1 cup lentils
1/2 teaspoon salt
3 tablespoons olive oil
1 small onion,finely chopped
1 medium green bell pepper, finely chopped
1 clove garlic, minced
3 medium tomatoes, peeled, seeded and chopped
1/8 teaspoon black pepper
6 1/8 ounces canned tuna, drained and flaked
1/4 cup grated Parmesan cheese

Recipe Directions for Tuna Lentil Casserole

  1. Place lentils in a medium saucepan and add cold water to cover by 1 inch. Add 1/4 teaspoon salt and bring to a boil over high heat.

  2. Reduce heat to medium and simmer until tender, 25-30 minutes. Drain well.

  3. In a medium saucepan, heat 2 tablespoons olive oil over medium-high heat. Add onion, bell pepper, and garlic. Cook, stirring often, until softened, 3 to 5 minutes.

  4. Stir in tomatoes and cook until thick and pulpy, about 5 minutes. Remove from heat and season with remaining 1/4 teaspoon salt and pepper.

  5. Preheat oven to 375.

  6. In a large bowl, combine cooked lentils with tomato

  7. mixture and tuna. Stir to mix well. Pour into a 1 quart casserole and sprinkle Parmesan cheese over top. Drizzle remaining 1 tablespoon olive oil over cheese.

  8. Bake casserole 15 minutes, or until lightly browned on top.
