Tuna Frittata Recipe

Adapted from a NYT recipe. Easy! Leftovers are yummy

Recipe Ingredients for Tuna Frittata

5 medium eggs
8 oz canned tuna
2 tbsp oil
1 medium onion, chopped
1 medium potato, diced
3 cloves garlic, crushed
1 medium bell pepper, diced
1/2 cup peas
1 tsp salt
1 tsp pepper

Recipe Directions for Tuna Frittata

  1. Heat oven to hot.

  2. Beat eggs until frothy. Drain tuna flakes

  3. In a cast iron pan, saute garlic and onion in oil.

  4. Season with salt and pepper.

  5. Add tuna, heat through.

  6. Add bell pepper and peas.

  7. Top with the beaten eggs.

  8. Pop in the oven for about 20 minutes or until eggs are set and golden.
