Tasty Take on a Classic Tuna Salad

Recipe Ingredients for Tuna Cauliflower Jalopeno Salad

2 cans tuna, drained
2 tbsp. Lemon Juice
1 tsp. salt
1/2 tsp. pepper
2 tbsp. red onion, chopped
1/4 cup celery, minced
1 cup cauliflower, chopped
2 tbsp. jalapeno, chopped, seeds removed
1/3 cup Mayonaise
2 tbsp. fresh cilantro

Recipe Directions for Tuna Cauliflower Jalopeno Salad

Drain tuna well, transfer to bowl and mix with salt, pepper, & lemon juice. Add onion, celery, cauliflower, & jalopeno - mix. Add mayonaise to taste - I like about 1/3 cup. Garnish with fresh cilantro.
