For less fat, use reduced fat cheese (original recipe called for a pound of meunster and 3 large tomatoes). Season as desired - I added oregano, salt and pepper. Fits into a 2 or 2.5 quart casserole dish. Adapted from Cooks: http://www.cooks.com/rec/view/0,178,159174-242199,00.html

Recipe Ingredients for Tuna Casserole Supreme

1 cup brown rice, cooked
8 ounces cream of mushroom soup
5 ounces tuna
1/2 cup water
2/3 ounces colby jack cheese, reduced fat
1 large tomato

Recipe Directions for Tuna Casserole Supreme

  1. Preheat oven to 350 degrees.

  2. Flake tuna. In saucepan combine tuna, cream of mushroom soup, cooked rice and water to simmer.

  3. In casserole dish, layer, beginning with tuna mixture, then tomatoes and ending layers with cheese.

  4. Cover casserole dish and bake 40 minutes or until cheese is melted. Serve hot.
