A brown rice based tuna casserole that's a good healthy one dish meal when your food budget's a bit tight. I used regular cream of mushroom soup and parmesan cheese, you could use reduced fat options.

Recipe Ingredients for Tuna Casserole

3 cans tuna, white, canned in water, drained
2 cups peas, frozen
1 cup brown rice, dry
1 can cream of mushroom soup
2/3 cup parmesan, shredded

Recipe Directions for Tuna Casserole

  1. Cook the rice.

  2. Gently combine the tuna, peas, rice and soup in a 9x12 or 8x8 casserole dish.

  3. Sprinkle grated parmesan on top.

  4. Bake at 350F for 20 minutes
