Fast easy comfort food. Use gluten free baking flour and brown rice noodles for a gluten free meal.

Recipe Ingredients for Tuna Casserole

2 cups rice noodles
1 tbsp butter
1 tbsp flour
1 cup lowfat milk
1/2 cup grated cheddar cheese
2 cups frozen peas
6 oz albacore tuna

Recipe Directions for Tuna Casserole

  1. Cook noodles according to package directions in salted water.

  2. While they are cooking, melt the butter on low heat in sauce pan. Add flour and stir to avoid burning. Let the flour mix into the butter and cook for at least a minute.

  3. Add milk to flour paste and stir until butter and flour are dissolved fully into the milk.

  4. Add the grated cheese and stir until melted.

  5. Put the frozen peas in the calandar and pour the cooked noodles over the frozen peas to drain the noodle water and thaw the peas in one step.

  6. Once well drained pour the peas and drained noodles back in the pot and add the cheese sauce, and tuna.

  7. Stir over low heat until all is creamy and heated through.
