Fried tuna patty - suitable for Atkins (including Induction)

Recipe Ingredients for Tuna Cake (low carb)

5 oz tuna, drained well
1 egg, beaten
1 oz cream cheese, softened
1/4 cup Parmesan cheese, grated
1 oz shredded mozzarella cheese
1 tsp paprika
1 tsp garlic salt
2 tbs butter
2 tbs fresh lemon juice

Recipe Directions for Tuna Cake (low carb)

Combine all ingredients, except butter and lemon juice. Form into 3 patties. Melt butter in hot frying pan (as hot as possible without burning butter to minimize sticking/crumbling). Fry on each side until brown. (Sprinkling each patty with additional grated Parmesan while frying results in an extra crispy crust.) Tends to fall apart, but tastes great. Top with lemon juice. (Cajun/Creole seasonings lend a nice kick.)
