Very easy and satisfying salad. Serve as a meal (serves 1) or as an appetizer or first course (serves about 4). Can be made and seasoned ahead, lasts about 4 days covered and refrigerated.

Recipe Ingredients for Tuna and Black-eyed peas Salad

200 grams Black Eyed Peas, Organic
84 grams Tuna, Light, Canned In Water, Drained Solids
1 tbsp Olive Oil
1 tbsp chopped Onions
0.25 cup Parsley
3 tbsp White Wine Vinegar, Organic

Recipe Directions for Tuna and Black-eyed peas Salad

  1. Drain and rinse the beans, and drain the tuna.

  2. Chop the onion and the parsley.

  3. In a serving bowl or container with a lid (if storing/carrying) combine all ingredients and mix or cover and shake to distribute seasonings.

  4. Serve chilled or at room temperature.

  5. Serve as a meal (serves 1) or as an appetizer/first course (serves about 4).

  6. Can be made and seasoned ahead, lasts about 4 days covered and refrigerated.

  7. In Portugal this is a summer picnic staple.
