Recipe Ingredients for Tuna, Artichoke, Roasted Red Pepper Salad

12 ounce artichoke hearts
1/8 cup chopped fresh dill
2 tablespoon extra-virgin olive oil
1 tablespoon fresh lemon juice
1/2 teaspoon freshly ground black pepper
2 garlic cloves, minced
2 cups chopped fresh baby spinach
10 ounce albacore tuna in water, drained and flaked
12 ounce roasted red bell peppers, drained and chopped

Recipe Directions for Tuna, Artichoke, Roasted Red Pepper Salad

  1. Drain artichokes, reserving 2 tablespoons marinade.

  2. Coarsely chop artichokes.

  3. Combine artichokes, reserved marinade, dill, and next 4 ingredients in a large bowl.

  4. Add spinach, tuna, and roasted peppers, tossing well.

  5. Serve with: Feta Pita Crisps

  6. Tip: Mix spinach right before serving if making dish ahead of time.
