My chocolate cake recipe w/o frosting. I use the batter for moist cupcakes.

Recipe Ingredients for T's Chocolate Cupcakes

1.75 cup Cake Flour Blend
8 oz Organic Cane Sugar
0.75 cup Cocoa, Dry Powder, Unsweetened
2 teaspoon Baking Soda
1 Teaspoon Baking Powder
1 tsp Kosher Salt
1 cup Milk, Buttermilk, Fluid, Cultured, Lowfat
8 tbsp Canola Oil
2 large Egg, White
8 oz Coffee

Recipe Directions for T's Chocolate Cupcakes

  1. Whisk together dry ingredients.

  2. Bloom cocoa in fresh hot coffee.

  3. Combine wet ingredients.

  4. Slowly add dry ingredients to wet ingredient mixture. Stir until well combined.

  5. Bake at 350 for 18-20 minutes or until a toothpick tests cleanly.
