Recipe Ingredients for Trudy's Involtini

575 grams Aubergine
100 grams tesco crumbly salad cheese
25 grams Parmesan, Grated Cheese
30 grams Pinenuts
465 grams Passata Italian Sauce
100 grams Ricotta, Part Skim Milk Cheese

Recipe Directions for Trudy's Involtini

Slice the aubergine thinly lengthways and fry or for low cal steam them. Mix the other ingredients except the passata together. Put a spoonful on each aubergine and roll it up. (For steamed aubergine put a layer in the bottom of the dish, put a layer of mixture, then top with a layer of aubergine. Poor on the passata and top with a bit of grated cheese. Bake in the oven at 190 for 25 mins
