Recipe Ingredients for Troys Braized Rum Roast

2 1/2 lbs chuck roast
1/6 cup salt
0.04 cup pepper
0.04 cup garlic powder
1 cup rum
2 tbs olive oil

Recipe Directions for Troys Braized Rum Roast

  1. Mix salt pepper and garlic powder together and rub down roast to cover all surfaces 4-1-1 mix ratio.

  2. Allow roast to come to room temp.

  3. Preheat oven to 250f.

  4. Place a dutch oven or oven safe pan on the stove top after adding the olive oil to the pan. Set burner for medhigh/high.

  5. Place the roast into the pan and sear both sides for 3-5 minutes each. The surface of the meat should be black.

  6. Remove heat, add rum. I prefere a nice dark rum with lower alcohol content. Allow a few moments for alcohol to evaporate then cover and place into oven. Allow roast to braize for 3-4 hrs.
