Trout with red pepper and almonds

Recipe Ingredients for Trout with red pepper and almonds

1 red pepper, deseeded and chopped
2 tomato, roughly chopped (or 10 cherry tomatoes, halved)
2 garlic cloves, chopped
1 tbsp olive oil
1 tbsp balsamic vinegar
200 g (2 fillets) trout
1 tbsp almonds, flaked
1 lemon fruit , cut into wedges, to serve

Recipe Directions for Trout with red pepper and almonds

  1. Heat oven to 190C/fan 170C/gas 5.

  2. Tip the pepper, tomatoes, garlic, oil and vinegar into a roasting tin, then toss them together.

  3. Roast for 20 mins, then make a space in the roasting tin for the trout fillets, scattering with the almonds and a little salt and pepper.

  4. Return to the oven for a further 10-15 mins, until the fish is cooked and the almonds lightly toasted.

  5. Serve with lemon wedges for squeezing over.
