Recipe Ingredients for Tropical Spinach Salad With Grilled Shrimp

1 pound large shrimp
6 ounce fresh baby spinach
1 mangoe, peeled and sliced
1/2 red onion, sliced
1 1/2 oz feta cheese, crumbled
3/4 cup fresh raspberries

Citrus Marinade:
1/2 cup fresh orange juice
1 tablespoons basil
1 tablespoons lime juice
1 garlic clove, crushed
1/2 teaspoon dried crushed red pepper
1/8 teaspoon salt

Recipe Directions for Tropical Spinach Salad With Grilled Shrimp

  1. Wisk all ingredients together for citrus marinade in meduim bowl, let sit.

  2. Peel shrimp; devein, if desired.

  3. Place shrimp in a large zip-top plastic freezer bag, and add Citrus Marinade. Seal and shake to coat. Chill while skewers soak.

  4. Soak skewers in water to cover for 30 minutes.

  5. Remove shrimp from marinade, thread shrimp onto skewers.

  6. Grill shrimp, covered with grill lid, over medium-high heat (350 to 400) 2 minutes on each side or just until shrimp turn pink, you may baste with remaining marinade if desiered. Remove shrimp from skewers.

  7. Arrange baby spinach on individule serveing plates. Top evenly with mango slices, onion slices, and grilled shrimp. Sprinkle with crumbled feta cheese, and raspberries. Serve with Fresh Basil Vinaigrette or dressing of choice.
