I wanted to incorporate mangoes into a healthy muffin. I found a recipe and made a few changes. These make me want to be on a beach somewhere! =)

Recipe Ingredients for Tropical Mango Muffins

1 cup all purpose flour
1/2 cup old fashioned oats, ground
1/4 cup milled flax seed
1/4 cup unprocessed wheat bran, ground
1 tsp baking soda
1 tsp baking powder
2 tsp ground cinnamon
1/4 tsp salt
2 tsp vanilla
1/4 cup honey
1/4 cup agave nectar
2 egg whites
1 egg
1/4 cup vegetable oil
1/2 cup unsweetened applesauce
1 tbsp lime juice
2 cups mango, diced
1 medium banana, mashed
1/4 cup raisins
1/4 cup chopped walnuts

Recipe Directions for Tropical Mango Muffins

  1. Combine the first four ingredients in a large bowl. In another bowl, lightly beat the eggs, then combine the vanilla, oil, applesauce, honey, agave, and lime juice. Add the dry ingredients just until moistened. Stir in the mango, banana, raisins, and nuts.

  2. Spray muffin cups with PAM or line with paper cups. Fill them two-thirds full. Bake at 350 for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes, then remove to wire racks to cool.
