Recipe Ingredients for Tropical Chicken Saute

1/3 c. all-purpose flour
1/4 tsp. salt
1/4 tsp. pepper
9 oz. chicken breasts, boneless, skinless
1 egg, beaten
1 tbsp. olive oil
1/2 tsp. dried tarragon
1/4 c. dry white wine
1 tbsp. lemon juice
1/2 tsp. butter
1 mango, diced

Recipe Directions for Tropical Chicken Saute

  1. Cut chicken into 3 portions. On a sheet of wax paper or a paper plate combine flour, salt, and pepper; dip chicken pieces into beaten egg, then dredge in seasoned flour, being sure to use all of egg and flour.

  2. In 12-inch nonstick skillet heat oil over high heat; add chicken and cook until bottom is golden brown. Turn chicken pieces over, lower heat a little and sprinkle with tarragon, and brown other side. Add wine, lemon juice, and butter, and bring to a boil; cook until liquid is slightly reduced and thickened. Add mango, cover, and cook until fruit is heated, 1 ? 2 minutes; serve garnished with parsley sprigs if desired.
