A friend made these cookies once and they were wonderful! This is the recipe she sent me.. originally it was 1/2 C apricots but I'm using apples instead. 103 calories each and makes two dozens!

Recipe Ingredients for Trisha's vegan cookie recipe

1/2 c Smart Balance 37% Light Buttery Spread
1 Banana, mashed
1 container tree top applesauce
1 tsp. vanilla extract
1/2 c splenda, granular
1 c whole wheat flour
1/4 tsp Salt
1 tsp. Baking powder
2 1/2 c quick oats
1 c chopped candied ginger
2 small apples

Recipe Directions for Trisha's vegan cookie recipe

  1. mix = butter, banana, applesause, vanilla extract, and sugar

  2. add = flour, baking powder, rolled oat flakes, coconut, ginger, and apples (corred,peeled,diced into cubes)

  3. Spoon heaping tablespoons of dough onto cookie sheet. press flat with your fingers.

  4. bake 12-15 minutes or until edges are browned

  5. makes ~ 2 dozen.
