Recipe Ingredients for Triple Chocolate Chip Cookies

0.5 tsp Vanilla Extract
0.33 cup Cocoa, Dry Powder, Unsweetened
1 cup Beans, White, Mature Seeds, Canned
2 serving Agave Nectar
3 large Egg, White
12 oz SPLENDA No Calorie
4 oz Chocolate Covered Cacao Nibs
2 serving Mint Chocolate Chip

Recipe Directions for Triple Chocolate Chip Cookies

  1. Preheat oven to 375. Line 2 baking sheets with parchment paper and spray lightly with cooking spray.

  2. Combine vanilla, cocoa, beans and agave nectar in food processor. Process until the mixture is smooth, about 3 minutes, scraping bowl halfway through.

  3. In the bowl of a mixer fitted with a whip attachment, beat egg whites until soft peaks form. Gradually beat in Splenda. Continue to beat whites until creamy and nearly stiff. Add 1/3 of the eggwhite mixture to the cocoa-bean mixture in the food processor. Blend to combine, 30 seconds. In 2 batches, fold lightened cocoa mixture into the egg whites until almost fully combined. Add cacao nibs to batter. Fold until nibs are enenly dispersed.

  4. Drop mounded spoonfuls of batter onto prepared sheets. Spread batter out to form cookies, about 2 1/2 inches in diameter. Sprinkle with chips.

  5. Bake for 20 minutes, rotating the pans one turn halfway through baking. Using metal spatula, transfer cookies to wire racks to cool.
