I found this recipe in a diet book from at least 25 years ago. I have updated it to bring the fat and cholestrol down.

Recipe Ingredients for Triple Cheese Manicotti.1

6 oz Manicotti Dry
3 1/4 cup Fat Free Cheese
1 cup Cottage Cheese Lowfat 2% Milkfat
1/2 oz Parmesan, Hard Cheese
14 1/2 oz Organic Traditional Tomato and Basil Sauce
1/4 cup leaves, whole Basil, Fresh
2 serving Egg Beaters Florentine

Recipe Directions for Triple Cheese Manicotti.1

Cook manicotti by package instructions. Combine cheeses, egg substitute and chopped fresh basil in bowl. Chop basil very fine. Poor enough sauce to lightly cover the bottom of baking dish. Fill manicotti with cheese mixture and place in dish. Top with remaining sauce. Bake for 25 minutes in 350 degree oven. Serve with salad.
