First of all, you can use any type of fruit you like in this parfait, as well as vanilla yogurt instead of strawberry, depending on preference. Also, I use low-fat yogurt, low-fat granola (not oats), and Cool Whip Lite whipped topping (instead of whipped cream), but could not include it due to the program. This delicious parfait is great for breakfast, a snack, or a dessert. The recipe is quick and easy to make. It is low calorie and generally nutritious as it includes lots of fruit, low-fat items (if made that way), and grains. The recipe is quite high in sugar, but this mainly comes from the fruit, which is one of the better sources of sugar. Also, the amount of protein is very low, but this defecit can be balanced out by eating other major sources of protein throughout the day. Although the recipe seems to have a high cholesterol, if it is made with low-fat items, this value will decrease to about 5-10 mg. An extra plus is that the parfait is low in sodium and is a good source of Vitamin C and calcium. This yummy parfait is a great way to fill you up for hours without putting on any pounds, and as long as the rest of the day is followed with a nutritious and well-balanced diet (with this recipe: less sugar, more protein), a healthy lifestyle is underway.

Recipe Ingredients for Triple Berry Parfait

2/3 cup raspberries
2/3 cup strawberries, sliced
2/3 cup blueberries
3 containers (6-ounce) strawberry yogurt
2 cups oats
6 tbsp. whipped cream
6 strawberries, whole

Recipe Directions for Triple Berry Parfait

  1. MIX raspberries, sliced strawberries and blueberries in medium bowl. Add yogurt; toss to coat.

  2. SPOON half of the granola evenly into six glasses; cover with half of the fruit mixture. Repeat layers.

  3. TOP with the whipped topping and whole strawberries. Only takes 15 minutes to make.

  4. Optional: Make Ahead- Prepare parfaits as directed. Cover and refrigerate up to 1 hour before serving.
