Using oatmeal makes this topping SO yummy!I just blend whole oats in my blender about 1/2 cup at a time.Unless you have a high power blender such as a VitaMix, too many at one time will burn up the motor.

Recipe Ingredients for Triple-Berry Cobbler

3/10 cup raw honey
1/4 tsp vanilla
3 T cornstarch
1/4 tsp ground cinnamon
1 cup cranberries
1 cup blueberries
1 cup bing cherries
1/4 cup raw sugar
2 T butter,softened
3/10 cup milk
1/4 tsp vanilla extract
0.67 cup oat flour
1/4 cup wheat bran
3/4 tsp baking powder
1/4 tsp salt

Recipe Directions for Triple-Berry Cobbler

  1. In small saucepan, combine honey,cornstarchy,vanilla,cinnamon,and water until smooth.Bring to a boil;cook and stir for 2 min. or until thickened.Remove from heat;stir in berries.Transfer to an 8-in. square baking dish coated with cooking spray.

  2. For topping, in a small bowl, beat sugar and butter until crumbly, about 2 min.Beat in milk and vanilla.Combine the flour ,baking powder,and salt;stir into butter mixture just until blended.Drop by tablespoonfuls over fruit mixture.

  3. Bake at 350 for 25-30 min. or until filling is bubble and a toothpick inserted in topping comes out clean.

  4. Serve warm with ice cream,milk,or whipped cream.
