Thanksgiving stuffing "flavor" in a veggie side dish!

Recipe Ingredients for Trimmed Down Squash Casserole

2 lb yellow squash
4 oz. sour cream, fat free
1 medium carrot, grated
1 onion, chopped
1 box Stove Top stuffing mix, cornbread
1 can cream of chicken soup, reduced fat
1 1/2 c water (from boiled squash)
1 chicken bouillon cube

Recipe Directions for Trimmed Down Squash Casserole

Slice squash and boil until tender. Reserve 1 1/2 C of water squash was cooked in. Mix all ingredients and place in a pan sprayed with cooking spray. Bake @ 350 for 30 minutes.
