Recipe Ingredients for Tricia's Mushroom, Squash, Garbanzo Bean Soup

20 oz. low sodium vegetable broth
2 serving, extra virgin olive oil
1 onion, diced
2 stalks celery, sliced
10 cloves garlic, diced
8 oz. mushrooms, mixed variety, sliced
2 yellow squash, small, sliced
15 oz. garbanzo beans

Recipe Directions for Tricia's Mushroom, Squash, Garbanzo Bean Soup

  1. Heat saute pan to medium high

  2. Add onions, squash, mushrooms

  3. Saute for a few minutes

  4. Add garlic

  5. Saute for a few minutes

  6. Add broth, garbanzo beans (rinsed), and celery

  7. Simmer for a few minutes
