Makes 8 4-oz. servings. This is a combination of unexpected flavors and textures that can take your taste buds to faraway places. After trying this I think some fresh ginger would be really good - the apricots make it pretty sweet - so if you want a spicier taste, leave them out. Or play with different ingredients!

Recipe Ingredients for Treasure Chest Chicken - from Mr. Food

1/4 cup dried apricots, cut into strips
2 T dried oregano
2 T capers, drained
1 T garlic, chopped
1 T fresh parsley, chopped
1/4 cup Splenda Brown Sugar
1/2 tsp black pepper
1/4 cup olive oil
1/4 cup red wine vinegar
2 lbs chicken breast, cut into 8 pieces

Recipe Directions for Treasure Chest Chicken - from Mr. Food

  1. In a large resealable plastic bag, combine all ingredients except chicken. Mix well.

  2. Add chicken, seal and marinate in the fridge at least 4 hours or overnight, turning bag occasionally.

  3. Preheat oven to 350 degrees F. Place chicken in a 9x13 baking dish. Bake uncovered 55 - 60 minutes or until no pink remains. Baste occasionally with pan juices.

  4. Serve topped with juices.

  5. NOTE: This is great served hot or cold. You can also marinate chicken in a glass baking dish, turning occasionally.
