A toothy, delicious rib-sticking pancake. Really good topped with apple butter or fruit. (The cream of wheat should actually be Multi-grain hot cereal)

Recipe Ingredients for Trailside Multigrain Pancakes

1 cup oatmeal
1 cup cream of wheat
1/2 cup whole wheat flour
2 tablespoons sugar
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp ground cardamom
2 cups buttermilk, low fat
1 egg
1 egg white
1/4 cup unsweetened applesauce
2 tablespoons sesame seeds
3 tablespoons sunflower seeds
1/2 cup chopped walnuts

Recipe Directions for Trailside Multigrain Pancakes

  1. Mix all ingredients together.

  2. Allow to sit until grains absorb moisture and batter is consistenly thick.

  3. Ladle onto hot griddle by 1/4 cups.

  4. Cook until done.
