Warm biscuits, crispy outside with slightly chewy inner. 3 = 1 serving

Recipe Ingredients for traditional oatcakes

8 oz oatmeal (medium or fine)
8 oz porridge oats
1 oz Margarine, Non-hydrogenated, Calorie Reduced
1 tsp salt
16 oz water
1 tbsp sunflower oil

Recipe Directions for traditional oatcakes

  1. Mix the oatmeal, porridge oats and salt. Add the butter. Boil the water and mix into the oatmeal until the butter is melted. Dump the mix onto clingfilm and roll into a sausage shape 3" in diameter, keeping the ends firm. Allow to cool.

  2. Slice the mixture thinly (each slice should weigh approx 1 oz). Dry-fry the slices in a smear of oil in a moderately hot pan. Squeeze the oatcakes flat with a spatula, and turn regularly, until they no longer squeak. Serve warm, with a sprinkle of salt if liked, or a light fat-reduced spread.
