Ground beef meatloaf with added veggies

Recipe Ingredients for Traditional Meatloaf

1/2 cup Italian Bread Crumbs
2 tbsp milk
1/2 medium onion, finely chopped
2 garlic cloves, finely chopped
1 celery stalk
1 small carrot
2 tbsp butter
1 tbsp worcestershire sauce
1 tsp balsamic vinegar
1/4 tsp onion powder
1/4 tsp garlic salt
1/4 tsp dried basil
2 slices Lower Sodium Bacon
1 lb lean ground beef
1 egg
1/3 cup flat leaf parsley, finely chopped
2 tbsp worcestershire sauce
2 tbsp brown sugar
1/3 cup heinz ketchup

Recipe Directions for Traditional Meatloaf

  1. Sautee veggies in butter for 5 minutes, cover for a couple of minutes, and remove from heat when softenend/cooked.

  2. Cook bacon until crispy, crumble and add to veggies.

  3. In a large bowl, mix bread crumbs, milk, veggie mix, beef, 1 tbsp worcestershire sauce, vinegar, salts, basil.

  4. Mix all together.

  5. From into a loaf on a lined broiler pan and poak holes in foil to drain fat from meatloaf.

  6. Add glaze to top of loaf (2 tbsp worcestershire sauce, brown sugar and ketchup), reserving some to baste later.

  7. Bake in a 375 oven for 45 minutes, remove to baste, return to over for 15 minutes.
