Recipe Ingredients for Traditional Italian Risotto

1 medium onion, diced
2 tablespoons olive oil
4 tablespoons butter
3 cups chicken stock, unsalted
1 1/2 cups arborio rice
2 cups water

Recipe Directions for Traditional Italian Risotto

  1. Brown the onion in the oil and butter in a medium saucepan until golden brown.

  2. Add 1/2 cups arborio rice and stir with a wooden spoon over medium heat for a few minutes.

  3. Add just enough stock diluted with water to cover rice. Stir frequently.

  4. As rice absorbs the stock, add the remainder until the rice is cooked, about 16-20 minutes. Rice will be creamy and al dente.
