While most stuffings for Thanksgiving are a base of bread, our family's traditional stuffing is a meat stuffing. This recipe makes a ton of leftovers which is delicious in a turkey sandwich.

Recipe Ingredients for Traditional Holiday French Stuffing and Turkey

1 lb. veal
1 lb. extra lean ground pork
1 tbsp+chopped shallot
3/4 lb. chopped mushrooms
2 stalks celery, thinly sliced
1 tbsp. salted butter
4 cups bread, cubed
3/4 cup hazelnuts, finely chopped
1 tbsp. poultry seasoning
2 tbsp. parsley
1 tbsp. salt
1/4 tsp. pepper
1 large apple, chopped
1/4 cup apple juice
1/4 cup cooking sherry
1 cup water

Recipe Directions for Traditional Holiday French Stuffing and Turkey

  1. Cook and drain the veal and ground pork, (or ground beef instead of the veal if you prefer).

  2. Saute the shallot (or onion if you prefer), celery and mushrooms until soft. Set aside.

  3. In the largest bowl you can find, pour in the bread cubes. Note: any loaf of bread works except the low calorie, but it is best to pull it into pieces yourself. Add the hazelnuts, poultry seasoning, parsley, salt and pepper. Add the chopped apple. Toss together until well coated. Pour in the apple juice, sherry and water. Pull up your sleeves and mix everything well with your hands to incorporate all the flavors, textures and liquids.

  4. Stuffing may be made the day before needed, but do not stuff your turkey until it is ready for the oven.

  5. Thoroughly rinse, drain and pat dry turkey. Stuff cavities lightly with stuffing and secure with turkey ties. Rub the skin of the turkey with olive oil and place breast side up in roasting pan.

  6. Bake in 325 degree oven under tin foil until thigh temperature is 185 degrees. Remove foil for last 1/2 hour to brown. Any leftover stuffing can be added to the pan during the last 1/2 hour of baking or you can bake it in a separate dish covered with foil. For best results, baste often with apple juice.
