Great stew very classic you can use celery or peas. (not both) and add corn starch / flour at the end if you need to thicken it.

Recipe Ingredients for Traditional Beef Stew

2 lbs boneless chuck roast, cut into 2-inch pieces
2 tablespoons vegetable oil
1 teaspoons salt
1 tablespoon freshly ground pepper
5 yellow onions, cut into 1-inch chunks
1/2 cup flour
4 cloves garlic, minced
4 cups Beef Broth
5 1/2 tsp dried rosemary
4 tsp,+crumbled bay leaf
1 1/2 teaspoon dried thyme
8 carrots, peeled, cut into 1-inch slices
2 cups frozen peas
5 large russet potatoes, peeled and cut in eighths

Recipe Directions for Traditional Beef Stew

  1. On medium-high heat, add the vegetable oil to a large heavy pot (it should have a tight fitting lid).

  2. When it begins to smoke slightly, add the beef, then brown it very well. Cook the beef in batches if necessary. Add the salt and pepper as the beef browns.

  3. Once it is browned, remove the beef with a slotted spoon and set it aside.

  4. Add the onions and saute for about 5 minutes, until they are softened.

  5. Reduce heat to medium-low, and add the flour and cook for 2 more minutes, stirring often. Then add the garlic and cook for one more minute.

  6. Add wine and de-glaze the pan, scraping any brown bits stuck to the bottom of the pan. The flour will start to thicken the wine as it comes to a simmer.

  7. Simmer wine for 5 minutes, and then add the broth, bay leaves, thyme, rosemary, and the browned beef.

  8. Bring back to a gentle simmer, cover and cook on very low for about 1 hour. Then add potatoes, carrots, and celery, and simmer covered for another 30 minutes or until the meat and vegetables are tender. Taste and adjust seasoning as required.

  9. Turn off heat and let cool for 15 minutes before serving. Garnish when serving with the fresh parsley if desired.
