to make ahead assemble as directed but do not sprinkle with bacon bits and onions; cover with heavy duty foil.

Recipe Ingredients for Tracy's make ahead mashed potato

4 pounds potato
1 cup low fat sour cream
1/2 cup light cream cheese
2 tsp onion powder
2 bacon, crispy and broken to bits
2 green onions

Recipe Directions for Tracy's make ahead mashed potato

  1. Cook potatoes in large saucepan of boiling water 10 - 15 minutes or until tender; drain. Place potato in large bowl. Add sour cream, cream cheese and onion powder, mash until creamy.

  2. Spoon into lightly greased 2.3Lcasserole; cover with plastic wrap. Refridgerate up to 2 days. Remove from refridgerator 30 minutes prior to baking. Discard plastic wrap.

  3. Heat oven to 350 degrees. Bake potatoes 1 hour or until heated through. Sprinkle with bacon bits and onions.
