This recipe is a traditional French-Canadian Christmas dish. There are many variations, but this is a family favorite.

Recipe Ingredients for Tourtiere (pork pie)

2 pie crusts
1 large potato
1 small potato
1 large onion
1 tablespoon vegetable oil
1 pound ground pork
1/4 teaspoon sage
1/4 teaspoon clove
1/2 teaspoon thyme
1/4 teaspoon salt
1/2 teaspoon pepper

Recipe Directions for Tourtiere (pork pie)

  1. Peel, boil, drain, and mash potatoes

  2. Mince onion very fine

  3. Prepare pie crusts and line 9 inch pie plate with one crust

  4. Preheat oven to 425 degrees

  5. In a fry pan, saute onion in oil until clear but not browned

  6. Add ground pork and crumble it up with a cooking spoon as it cooks

  7. When the pork is browned, add mashed potato and mix in well

  8. Add all seasonings, adjusting amounts to taste (I usually add more clove but not too much more)

  9. Turn meat mixture into pie plate

  10. Cover with second crust and seal as you usually do with a pie

  11. Pierce the top crust so that steam can escape as it cooks

  12. Bake at 425 for the first 15 minutes, then lower the heat to 375

  13. Bake for about an additional 45 minutes, until crust is golden but edges are not burned.

  14. Serving suggestion: ketchup brings out the flavor!
