Main dish salad with a mexican flair

Recipe Ingredients for Tostado Salad

1 lbs ground turkey
15 1/2 ounces chili beans
1 1/4 ounces taco seasoning
1/4 cup water
1 head lettuce
1/2 cup fat free sour cream
1/4 cup thousand island dressing
8 oz corn chips

Recipe Directions for Tostado Salad

  1. Make the filling: Brown turkey. Add undrained chili beans, taco seasoning and water, let simmer 10 minutes. Cool and place in fridge to cool.

  2. Chop lettuce.

  3. Make dressing: Mix sour cream and thousand island together and toss together with lettuce and cooled meat mixture. Spoon into 8 bowls.

  4. Top with olives, grated low fat cheese, tomatos, etc. as desired. Place 32 fritos on top of each bowl and serve.

  5. I make the filling on Sunday and then one night during the week, I use this as my fast food.
