Recipe Ingredients for Tostada Pie

18 cups cooked brown rice
3 medium onions, diced
3 small onions, diced
1 1/2 cups vegetable oil
3 tablespoons fresh garlic, minced
12 cups cooked kidney beans
4 1/2 cups fresh lime juice
6 cups diced plum tomatoes
3/4 cup fresh cilantro
36 cooked corn tortillas
12 cups shredded romaine lettuce
12 cups shredded kale
12 cups monterey jack cheese
3 pints sour cream

Recipe Directions for Tostada Pie

  1. Heat oil in frying pan, add onion and cook until translucent, add chili powder and saute.

  2. Transfer to mixing bowl and add fresh cooked brown rice and stir.

  3. In separate bowl add romaine and kale

  4. Salsa:

  5. Mix all salsa ingredients together in separate serving dish.

  6. Serving Instructions:

  7. Place 1 cooked corn toritlla shell flat on plate.

  8. Add 1/2cup hot tostada filling on top of shell. Add 1/4 cup cheese,1/4 romaine and kale,1/4 cup salsa mixture and top with sour cream.
