Tossed Salmon Pasta Recipe

It's a light meal, but very tasty.

Recipe Ingredients for Tossed Salmon Pasta

2 salmon fillets
4 cloves garlic
1/2 red onion
1 green pepper
1 red pepper
8 oz mushrooms
2 tablespoon olive oil
4 teaspoon lemon juice
8 ounce whole wheat pasta
4 tablespoon grated parmesan cheese

Recipe Directions for Tossed Salmon Pasta

  1. Chop veggies and mince the garlic.

  2. Using the olive oil in a skillet, cook the veggies (minus garlic) at medium heat for 5 to 10 minutes or until tender. Add garlic and continue to cook, covered for another 5 minutes.

  3. Cook pasta according to package.

  4. Cook the fillets in a seperate skillet over medium heat until flakey. I also seasoned the salmon with fish rub, but this is optional.

  5. Flake the salmon into pieces with a fork. Add salmon and pasta to the veggies and toss together.

  6. Serve pasta mixture in a bowl or on a plate, sprinkle with lemon juice and parmesan cheese.

  7. Garnish and serve. Yummy.
