A restaurant favorite of mine! [Adapted from Top Secret Restaurant Recipes]

Recipe Ingredients for Toscana Soup

3 cups low sodium chicken broth
1/3 cup heavy cream
1 red potato
2 cups kale
1/2 pound turkey sausage
1/4 tsp crushed red pepper flakes

Recipe Directions for Toscana Soup

  1. Combine broth and cream in saucepan over medium heat.

  2. Slice unpeeled potato into 1/4 inch slices, then quarter the slices and add to soup.

  3. Chop kale and add to soup.

  4. Grill/saute the sausage. When cooked and cooled, cut sausage at an angle into slices 1/2 inch thick. Add to soup.

  5. Add red pepper flakes and simmer 1 hour. Stir occasionally.
