Recipe Ingredients for Tortilla Torta

1 cup black beans , drained and rinsed
1 cup frozen corn, thawed
4 oz roasted red pepper, diced
16 oz plain non-fat Greek yogurt
1/2 cup 1% milk
1/4 cup reduced fat cream cheese
9 oz corn tortillas
12 oz salsa verde
8 oz canned green chilies
8 oz Monterey Jack cheese, shredded

Recipe Directions for Tortilla Torta

  1. Preheat oven to 375. Lightly oil a 9" square pan.

  2. Stir together beans, corn and peppers. Blend yogurt, milk, and cream cheese until smooth.

  3. Arrange one third of the tortillas tortillas in pan, top with half on bean mixture, half of yogurt mixture, half of chilies, and a third of the cheese. Top with one third of the tortillas and repeat. End with final third of tortillas and final third of cheese.

  4. Cover tightly with spray-oiled foil and bake 15 minutes. Remove foil and bake 15 minutes more or until bubbly and the cheese is browned. Let stand 8-10 minutes before serving.
