deeelicious! I use the no-salt verstion of tomatoes and beans, then add to taste. I don't think the numbers for calories or sodium are correct here, from my calculations they should be lower. Still it's a lovely soup.

Recipe Ingredients for Tortilla Soup - vegetarian

1 tsp olive oil
1 small onion
2 jalapeno peppers
1 poblano pepper
4 cloves garlic
1/4 tsp red pepper flakes
3/4 tsp salt
24 oz can tomatoes, no salt
24 oz vegetable broth
4 oz Baked! Tortilla Chips
1 tbsp ground cumin
15 oz pinto beans, no salt
1 cup frozen corn
1/4 c chopped cilantro, fresh
38 g lime juice

Recipe Directions for Tortilla Soup - vegetarian

  1. Preheat a 4 qt pot over med high heat. Saute the onions, jalapenos and poblano pepper in the oil until the onions are translucent, about 5 minutes. Use a little nonstick cooking spray if needed. Add the garlic, red pepper, and salt if desired and saute for another minute.

  2. Break up tomatoes with your hands and add to the pot with the juice. Add the broth and mix in the cumin. Crush 2 oz of the chips into crumbs and add to the pot. Cover, bring to a boil Once boiling, reduce the heat to simmer, add the beans, corn, and cilantro and simmer for a few more minutes.

  3. Add the lime juice and taste for salt and other seasoning. Serve in bowls with remaining tortilla chips crumbled over the top. Garnish with cilantro.
