Recipe Ingredients for Tortilla Soup (Veg Style)

1 onion, chopped
2 cloves garlic, minced
1/4 teaspoon pepper
2 cups vegetable broth, low sodium
1 3/4 cups stewed tomatoes, no salt added
1 cup frozen yellow corn
1/2 cup chili peppers
1/4 cup fresh cilantro, chopped

Recipe Directions for Tortilla Soup (Veg Style)

  1. Saute onion, garlic, cumin and pepper.

  2. Add broth, tomatoes, corn and chiles. Stir. bring to boil, then reduce to low and simmer for 8 minutes. Stir in cilantro.

  3. Serve over tortilla chips and garnish with jack cheese. [chips & cheese not included in recipe calories]
