Great Tex-Mex Tortilla Soup. Really easy and good. Spice it up with jalepenos if you like it hot!

Recipe Ingredients for Tortilla Soup

8 ounces chicken breast
8 ounces tortilla chips
28 ounces chicken broth
14 3/4 ounces cream corn
10 ounces ro tel
2 stalks celery
1/4 cup onion, chopped
1/4 cup green pepper, chopped
1/4 cup cilantro, chopped
1/4 cup carrots, sliced

Recipe Directions for Tortilla Soup

  1. Mix all together in a large pot.

  2. Simmer until vegetables are tender and chicken is done. Remove chicken breast and shred. Set aside.

  3. Transfer half the broth mixture to a blender or food processor and puree. Add pureed mixture and chicken back to pot.

  4. Simmer until hot and bubbly.

  5. Serve with additional tortilla chips, sour cream and cheese.
