Recipe Ingredients for Tortilla soup

32 oz. diced tomatoes
2 cups chicken broth
1 zucchini
1/2 carrot
1/2 yellow onion
2 fresh garlic cloves
1 cup corn
1 cup quorn tenders
1 tbsp cumin
1 tbsp chili powder
2 tsp cayenne pepper
3 tsp corn starch
2 tsp oregano
3/4 cup black beans
2 oz. tortilla chips
1 tbsp olive oil

Recipe Directions for Tortilla soup

  1. Saute onion, garlic, spices in olive oil

  2. Add chicken & saute

  3. Add tomatoes and liquids, remaining ingredients

  4. Bring to boil, simmer for 30 minutes

  5. Crush tortilla chips, top soup, & serve
