Chicken tortilla soup that is just as good as the restaurants serve, but without all the extra fat and calories.

Recipe Ingredients for tortilla soup

3 1/2 cup canned stewed tomato
2 can fat free chicken broth
2 1/2 cups condensed cream of chicken soup
1 pound chicken breast tenders
2 tsp chili powder
1 tsp cumin
4 cloves garlic
1/2 cup chopped onion
1 1/2 cup black beans
1 tablespoon olive oil
2 cups frozen corn kernels
4 white corn tortillas

Recipe Directions for tortilla soup

  1. sautee onion and garlic in olive oil until soft. Add chicken breast and cook until chicken is browned. Add tomatos, broth, condensed soup, chili power and cumin. Bring to a boil then allow to simmer for 15 minutes. Add corn, black beans, and finely chopped tortilla to the pot. Bring soup back to a boil and then allow to simmer for an additional 30 minutes. Remove chicken breast from soup and shred then add back to soup. Soup can be pureed if a smoother soup is desired. Garnish with fresh chopped cilantro and a squeeze of fresh lime juice.

  2. I use low sodium black beans, low sodium broth, and healthy choice condensed chicken soup but couldn't find those items on the site to add to the recipie so the sodium content for this soup is over inflated.
