Recipe Ingredients for Tortilla Soup

1/2 cup onion, chopped
3 cloves garlic, minced
1 tablespoon olive oil
2 teaspoons chili powder
1 teaspoon cumin
28 ounce crushed tomatoes
29 ounce condensed chicken broth
1 1/4 cups water
1 cup frozen corn
4 ounce chopped green chili peppers
15 ounce black beans, rinsed and drained
1/4 cup chopped fresh cilantro
2 boneless chicken breast halves, cut into bite-sized pieces
1 tbsp lime juice

Recipe Directions for Tortilla Soup

  1. In a medium stock pot, heat oil over medium heat.

  2. Saute onion and garlic in oil until soft.

  3. Stir in chili powder, cumin, tomatoes, broth, water, and chicken. Bring to a boil, and simmer for 5 to 10 minutes.

  4. Stir in corn, chiles, beans, cilantro, and lime juice. Simmer for 1 hour.

  5. Good without tortilla chips, sour cream, cheese, etc., but of course you can use them! Just remember to add in the calories if you use these toppings.
