Tortilla Soup Recipe

Garnish with avocado, spinach or monteray jack cheese and a crisp tortilla

Recipe Ingredients for Tortilla Soup

750 ml diced tomatoes
2 cup chopped onion
4 garlic cloves
1 tbsp canola oil
1 tbsp cumin
1 tbsp chili powder
4 cup organic vegetable stock
2 tbsp corn flour
70 g lime juice
2 cup black beans
2 ears corn
1 cup chopped cliantro

Recipe Directions for Tortilla Soup

  1. Saute veg in oil, add spices and cilantro Add cumin then tomatoes and stock. Mix corn flour with lime juice and zest of 1 lime, blend and add to soup to thicken.

  2. When thick, add corn, simmer until cooked (not too long) add (rinsed) beans and take of heat once beans are warm. Add a bit more cilantro at end.
